In a small bowl, combine orange juice, honey, soy sauce, and cornstarch.

In a wok or large skillet, heat oil over high heat. Add carrots, and stir-fry 1 minute. Add celery and green peppers, and stir-fry 1 minute longer. Add garlic and ginger, and cook 30 seconds longer. Swirl orange juice mixture, and add to pan. Stir until thickened and clear, about 30 seconds. Stir in nuts, if desired.

Overdose

If your nose turns yellow, you might be munching too many carrots. A high intake of carotenoid pigments, which give carrots their orange color, causes carotenemia, a harmless condition that disappears within a few weeks if carrot consumption is reduced. Makes one wonder why a bunny’s nose is pink.
